Pork

Pork chop, papusa stuffed with parmesan and fennel pollen, and sliced tomato with caramelized onion vinegar, fermented white pepper, and red salt. Wine: Martin and Croshaw MC4 2013.

A lovely dinner, and I was able to mostly taste it. Rather ahead of what I'd been lead to expect, my sense of smell has begun to return (it's probably at about 40%). I also woke up covid symptom free (remaining smell deficiency aside).
