2023 Tuesday — Low Sodium

We’re looking for low sodium meals. He is allowed 500 mg of sodium per meal, 3 meals a day for a total of 1500 mg daily. This is going to be a transition. I think we can do this. Mr. Fun’s insurance provides 2 meals a day for 30 days, but those won’t begin until this Friday.

This has been a day of feeling out of sorts and trying to find a routine. I headed to the market to see what my options are for fixing meals for Mr. Fun. Reading the labels on all the food we consume has been an eye opener. And it is especially disconcerting to see the labels on the Healthy Choice prepackaged meals. I read the back label of every HC package in the freezer case. I’ll need to take a photo of this section of the market’s freezer case because you won’t believe how many packages I am referring to. Two of the packages in that freezer case are under 500 mg. Holy Moly!

Thankfully he loved the meal in this photo, which is good. He might be eating a lot of this particular item.

I even looked in the “non-meat” vegetarian/vegan section and the sodium in those packaged meals is nothing to write home about.

So I purchased a bucket-load of zucchini to bring home, dice, and steam. We love zucchini. I purchased some Angus beef patties to sauté one for me each night for the next few nights while I work thru this.

I also purchased a bunch of strawberries, boysenberries, raspberries, and grapes. The nutritionist said to fill his plate with vegetables (and fruit is good too). “Get full on those items; then eat very little of the items that you would normally pig-out on,” the nutritionist said.

If watching his sodium wasn’t enough to push me right to the edge, Mr. Fun’s potassium intake is also being monitored— did you know that tomatoes, potatoes, as well as bananas are loaded with potassium? We are doing a balancing act here and I’ve never used a balance beam and I haven’t worn a leotard in forever.

So, that’s our first Tuesday home from the hospital. Good night,

P.S. I did tell Mr. Fun, “Two months from now will be Christmas Eve; we’ll be able to look back two months to see all the progress you’ve made.”
