I learnt an old-fashioned way of preserving eggs a couple of years ago - water glassing, or storing them in hydrated lime.
It's amazing: I just made a Christmas cake with eggs that had been stored since August 2022. They're just as good as fresh eggs.
Our hens are providing more than we can use at the moment, so I've just preserved a couple of buckets full to keep us going during the dry spell over the winter.
The ones in the photo are some of the ones that are left.
