Mass production
W makes a lovely lentil version of shepherd's pie.
Last night he cooked up a huge batch of the lentil part, with added carrots, sweet potato, celery, mushrooms and more. He used just a small part to make a shepherd's pie, with mash on top, for our dinner, and here is the rest, packed into containers for the freezer.
I've been following a series of bike rides in Bhutan on my static cycle - I think that has to be top of the list as a destination for next winter! Seems to have a great combination of wonderful scenery, interesting wildlife and fascinating people.
After I'd done a static bike session, and W had packed the freezer we went up to Enniscorthy to meet our lawyer - we are trying to navigate the inheritance tax rules in Ireland and make decisions on how we can best leave our "massive" fortune without giving TOO much to the state!
