jam making season

The flowers may not be in full bloom, but the rhubarb is. We have a great first crop of rhubarb which needs to be used before it goes to seed. My first port of call is to use it for jam.
As 20 jars of rhubarb jam can be a bit wearing on the taste buds after a while, I googled "rhubarb Jam" to find alternative recipes. I have tried rhubarb and ginger previously, but I haven't managed to achieve that lovely ginger taste one gets from commercial jam. This year I will add more ginger. I did find some other interesting recipies, rhubarb and vanille, which got very good reviews; rhubarb and apple; strawberry; orange. So there is lots to choose from.

Any left overs will go to making rhubarb crumble. I shudder at the amount of sugar I will be using. One consolation - it will be organic !! (I don't think that will make much differnce).
