Pork Chops

Five spice pork chops, quinoa and pepper salad, and compressed balsamic watermelon and tomato salad with feta and thyme. Wine: Domaine Bart Les Echezots Marsannay 2019.

I got a new toy for myself over the holiday shopping season: a chamber vacuum sealer. Today I used it to infuse and compress some watermelon to use in a rather fancy (and extremely good) salad. I anticipate more compressed and infused fruits in my future.
