We went to Castle Espie Wild Fowl and Wetlands Trust site this afternoon..Bitterly cold, but bright..They are sourcing and conserving some ancient varieties of Irish apple trees.. Definitely a hot chocolate day! It is a tradition that we visit the apple trees on 6th January to bless them, in the hope of a good harvest..They use the apples in a locally made ice-cream to serve in the restaurant..
