Thick Cut or Thin?

Seville oranges are in the shops so Gran has started her annual marmalade-athon (these are the jars that won't fit in the cupboard). I love the smell in the house when it is cooking but I don't like the taste so Gran is going to turn the remaining oranges into Orange Curd which sounds good!
