Tomato soup.

This week’s soup is roasted tomato. It is unusual in that it has tinned plum tomatoes that you roast, then blend. I had never heard of this before but it really intensifies the tomato flavour and tastes great. I roasted them in the air fryer with the onions and garlic in a dish that fits the drawer, then transferred to a saucepan.

I made some cheesy sourdough croutons, rather than doing the extra faff in the recipe.
