Carrot and coriander soup

After sampling some Carrot and Coriander soup at The Watermill Cafe just outside of Settle last week, I thought I’d have a bash at making my own.
The secret is to put a bit of potato in it to thicken it and onion to sweeten it.
It was delicious.
