Mondo Chorizo Hash

Met up with my sister and niece today for a natter and a bit of lunch.
As the title suggests, we went to a locally owned cafe called Mondo’s. This was on their brunch menu and consisted of chorizo, red onion, tomato, potato, kale and topped with a poached egg in a pesto dressing.
Twas delicious.
