Paella to follow.  It was a faff.  The paella dish was rusty and dusty but Google told me (in Spanish) to mix lemon juice with bicarbonate of soda and scrub it with a metal brush, then fill it with vinegar and water and bring it to the boil.  It sort of worked and in the dark no one would have known any better.
