The last canapé

Waiting in for the Gas Board, so playing around with some food ideas.

Croustade containing smoked fish mousse (mackerel, salmon, cream cheese, lemon zest, horseradish, smoked chipotle) topped with coriander lime sauce (strained greek yoghurt, lime zest, coriander leaf, sugar). Finished with micro coriander and grated lime zest.

NB pomegranate seeds on top would look good, provide a sweet hit and give it a puri vibe.
