The sacrificial (New Zealand) lamb

I usually aim for British meat but couldn’t resist the half price Sainsbury’s price tag on this and having been to New Zealand I know how much they care to maintain a pure environment.
I remember how my mum told me how my dad and his widowed father would finish a whole leg of lamb between them on a Sunday. I plan to make at least three meals from this plus lamb stock to make future lamb gravy.
