Heirloom Tomato Dinner
I got the most beautiful heirloom tomato at work tonight. The thing could've fed four people! It was huge! And it was so beautiful, I had to plan a meal around it.
First I sliced it and got 7 really big slices, I plated two each for us to eat with fresh basil and balsamic vinegar, then I diced up the rest for the pasta. I made fettuccine noodles with olive oil, salt, pepper and garlic powder then I tossed in the diced tomato.
I made the salads out of a little head of romaine lettuce from our backyard and sliced strawberries from a local farm.
Top it off with a lemon ginger cayenne kombucha from Brew Dr. and you have a light, refreshing summertime meal. It was so good :)
I highly recommend planning a meal around a tomato like this, yourself.
