Looking for inspiration...

...for something different to do with beetroot. 

I have enough beetroot curry in the freezer. I have pickled heaps. Salad with ricotta, parsley and onion is a long-time favourite. A dip made with beetroot, mayo, cream cheese and chives - ditto. 

Happily HF-W has a recipe for beetroot, boiled eggs and anchovies. That's supper sorted.

If anybody has any other exciting beetroot recipes please share them. My crop is ongoing.

The sun has shone all day again. I was in G's garden all morning, sowing anemones and ranunculuses (ranunculi?), amongst other things. She is terribly well organised with her flower garden.
