Mint & cacao nibs ice-cream
I'm not partial to ice-cream in general, the commercial stuff being overly sweet for my taste. When the temperatures get this high, however, something icy and refreshing is called for.
As I grow several types mint in the veg. patch (Pineapple, Chocolate, Moroccan, Spearmint) and they are all flourishing, I am trying to use it as much as possible.
The ice-cream here is made from frozen bananas and a little coconut oil which is blended with fresh mint. The colour was so subtle, I decided to add a pinch of spirulina for extra greeness. It's sprinkled with cacao nibs.
It's an effortless and instant cooler. Just right for our current heat-wave.
