Sunday Lunch
A foodie Blip for a Sunday.
In my family, and Lloyds too thankfully, I've always grown up knowing that Sundays hold the tradition of eating a well prepared lunch, which usually takes the whole morning to lovingly prepare.
My dad (being of Polish blood) merged that tradition with his mothers, and always made several plates extra in case "a passer by on the street" came in.
Now as harsh as it sounds, we wouldn't advertise for a stranger to enter our house for Sunday lunch, but the Polish tradition hard wired into him usually meant he had a lot of bubble and squeak to knock together of an evening.
Today, my heritage is a little too watered down to panic if there wasn't any spare for the neighbours (sorry neighbours), but Lloyd and I still and will hopefully always continue to make Sunday the day to cook..and think whilst we're doing it.
Today I made "Green Lasagne" with nutty side salad.
This is dairy, meat, gluten, free, and wholly plant based besides the gluten and dairy free pasta sheets.
Ingredients include tomatoes, aubergene pesto, tofu, basil, spinach, lemon juice, garlic, and seasonings.
The salad simply consists of spinach, lemon juice, tomatoes, pine nuts, and avocado.
Fresh, and Vegan friendly.
Lloyd thoroughly enjoyed his meatloaf roast.
We now have very satisfied tummies, and are ready to hit the road to the garlic farm.
