Mima's Crackers
It is a very simple Crackers recipe:
2 cups flour (plain white, wholewheat, or spelt, or a combination)
1/4 cup oil (olive or vegetable)
3/4 cup hot water
1 teaspoon salt
A few twists of freshly ground black pepper.
Combine all the ingredients into a dough.
Roll out to 2mm thickness.
Cut into sizes / shapes as desired.
Put onto a baking tray, prick each one with a fork and sprinkle with extra salt.
Bake at 190C for about 10 minutes until golden brown.
Cool on a wire rack.
The Fromage Fort recipe is equally easy...
500g offcuts of cheese - the stronger the better
1/2 cup of white wine
2 cloves garlic
15 olives (de-stoned)
A few twists of freshly ground black pepper
Cut the cheese into small chunks and put it into a food processor with all of the other ingredients.
Whizz for a few minutes until it is smooth. Add more wine if it looks too dry.
It keeps in the fridge for a week or two.
If it tastes too strong, mix it with some mayo or yoghurt.
