Meet Amanda the Butcherette who runs her own homekill and wild game processing business.   The forester has been away house sitting in the North Island and has come home with venison.  The not so good cuts were taken out to Amanda to be made into sausages.  I have choosen these flavours: fresh herbs and garlic, Manuka honey and hickory, apple and onion.  The forester first met Amanda when she worked for the town homekill butcher.  It was an industrial plant and she stood out with her make up and pretty hair and bouncy personality.  Four years ago she set up on her own from her home in the country.  It has been a success and bookings are essential.  You can't just turn up with a load of meat.  Her mother is her assistant.  It was a lovely drive out in the country on a sunny day and I saw a paddock with ewes and lambs.  The song choice was easy today.
