Five-Minute Ice Cream
For the finale to the "Not Your Parents' Chemistry Set" class today, Dr. Raymond made ice cream from scratch in about five minutes.
The recipe is very simple, but one of the ingredients might be a little hard to find -- liquid nitrogen, which only exists as a liquid at temperatures around -200C/-330F. You can see the nitrogen vaporizing as it's being poured from the large thermos flask. Contact with the liquid can cause injuries similar to severe burns.
The ice cream was quite good, though not on a par with Bellingham's Mallard ice cream.
Cynthia's account of the day is here.
