Millionaires Shortbread

With storm Darragh raging all day there was no way I was venturing out today. So, encouraged by the half price electricity from Scottish Power between 11 and 4pm, I did 3 loads of washing and drying and did a load of cooking/baking - tomato soup, Beef casserole, apple crumble and two types of shortbread including this millionaires shortbread. It’s my husbands favourite but apart from one small square, it all went into the freezer.
