Soup Day
Sharing a potato soup recipe as we go back to cold temperatures for a few days.
Start with bacon- 4 to 6 slices ( I use 6 because BACON!). Cook over medium heat until crispy. I precut my bacon into bite size pieces. Remove for later.
To the bacon grease add 1 onion chopped, 2 stalks of celery chopped, cook until soft, add 2 tablespoons minced garlic and mushrooms (don’t like mushrooms-ignore!), cook until mushrooms start to soften. Add 1/3 cup flour over veggies and stir to incorporate and coat.
Add 6 cups of water and 2 tablespoons of chicken bouillon stir until it is creamy and flour is off veggies. (Next time I will use chicken broth just because!)
Add 3 large potatoes diced. Cook until potatoes are like you want. I don’t do mushy.
Add a medium carrot, grated and a can of white corn (use a cup of frozen like I did)
A handful of spinach if you want like I did
Add a half cup of cream or milk
Boil about 5 more minutes
Salt and pepper to taste, we like lots of black pepper
Top your bowl of soup with the bacon and maybe grated cheddar. Or Parmesan. Or your favorite cheese
