Homemade Soup
Made homemade soup today. First time since returning from hospital.
As it was bubbling away, Marilyn phoned & asked if I would like a visitor. I said yes, soup was already on & would be ready in 10 mins so plenty of time to arrive.
So we had lunch - soup & sandwich together & chatted about this and that.
Didn’t feel I could tell my best friend my health news over the phone. Sometimes good to chat & have another cuppa tea after & a good hug.
Cards swapped & trying to arrange another time to meet up soon. We always used to have tea, scone & cake at Cloudberry Café on Christmas Eve, not sure if we will for this year’s.
Went a different route for my walk today & saw the tree with winter cherry blossom on it. A bit windy & wet today and I can’t climb up the grassy slope to get photos close of the blossom like I used to. But good to see!
Lentil Soup
2 handfuls of red split lentils
1 Veg stock cube
1 teaspoon sea salt with herbs (to your taste)
1 leek
2 carrots
1 parsnip
2 small potatoes
Fill up with hot water
35 mins on medium heat until bubbling then simmer, remember keep stirring every so often as it thickens. Too hot to serve so can leave off to cool for several minutes.
Always better the second day!
