Staffordshire vs. Derbyshire oatcakes

We'd never eaten one but I wanted to, so tried a recipe.  Very unprepossessing appearance before fermentation, but were scrummy.  I have since had one in Hathersage (with scrambled eggs, salmon and avocado) and it was thinner than I made them - I was told this makes mine more like Staffordshire oatcakes.
