Chickpea Blondies
Chickpea blondies

Ingredients
1 x 400g tin chickpeas, rinsed and drained
1 small overripe banana
130g smooth almond butter
2 tsp vanilla extract or paste
½ tsp baking powder
½ tsp bicarbonate soda
80g dark chocolate chips
Method
Preheat the oven to 180°C (not fan)/gas mark 4.
In a food processor or blender, blend the chickpeas, banana, almond butter, vanilla, baking powder, bicarbonate of soda, and a very small pinch of salt, until a smooth paste is formed.
Transfer the mixture into a large mixing bowl and lightly mix through the chocolate chips. Leave 1-2 tbsp aside to sprinkle on top at the end.
Either line a small (8×8 inch) non-stick baking tray with baking paper, or generously grease with butter, and press the mixture into the tray.
Bake for 20mins and allow to cool for 5-10mins before cutting into 8 or 16 squares (if cut into 8 squares, enjoy 1 blondie per person. If cut into 16, enjoy 2 per person).
