Wednesday Recipe no 1.
Rather than posting my daily menu for my Eat well for £20 a week challenge, I will post a favourite recipe from the week each Wednesday (tag: Wed-recipe)
Stuffed Peppers
Red peppers are probably best, but I've used yellow today, because that's what I have!
Ingredients per person:
1 pepper
1 cherry or ½ a larger tomato
½ tin tuna (drained)
A little finely chopped garlic or spring onion (optional)
Fresh basil leaves (optional)
Olive oil (or oil from drained tuna if it is in sunflower oil)
Method:
Cut the pepper in half, lengthwise, de-seed and lay in a roasting tin.
Spoon in the tuna.
Add halved cherry tomatoes, or slices of tomato and garlic or spring onion - finely chopped.
Drizzle with olive oil (or oil from tuna)
Season with salt & black pepper.
Roast in oven 180 C for about 45 mins until pepper is cooked through /soft.
Dress with fresh, torn basil leaves.
Delicious hot, warm or cold.
Serve one half as a starter or a whole pepper per person, with a green salad and/or rice (to soak up the lovely juices) as a main course.
Splash out on anchovy fillets (2 laid in a cross on top of each half pepper) if you're feeling flush!!
Cost:
Pepper, 20p (from market.) Half tin of tuna, 55p. 1/2 tomato 5p. Rice, 15p per portion. (Olive oil, garlic, basil, green salad negligible cost)
Total: 95p per person.
