Enticing Spring
I'm actually not in a huge hurry for spring as I'm so enjoying winter! However, the pretty plate with my spring-themed tablecloth remind us that spring follows winter.
Over Christmas and new year, I enjoyed seasonal treats like a mince pie, almond cookies and chocolate-dipped pecans. There may have been some dark chocolate too.
So now it's time to delve into the delicious recipes I've been collecting since I joined the Fast800 health site last year. I continue to remain a member for the interesting articles each week, new and tasty recipes and low impact gym sessions and guided meditation!
This particular dish is red lentil curry, cooked with celeriac, ginger root, onions and a little coconut milk. Served with wholemeal rice and green beans. I have made enough for two days as I have a busy day tomorrow.
