Curry day

Bit of a lie in and took the dogs for a walk around the roads. Just before Christmas I bought the Curry Guy bible after tasting some of the curries in the book at the B’s house so today was the day to try them out. Spent the morning making 3 liters of the base sauce and cooking 1.3kg of beef in some stock. Most of the curries take 500ml of base sauce and 200ml of stock so the rest of the base sauce went into boxes in the freezer and the stock from the meat cooking into ice cube bags. Took the dogs to Gayfield for some ball throwing after lunch and stopped off to get some more onions to make the onion paste to go into the beef dopiaza for tonight. Make Indo style sweet and sour style chicken as a starter and learned you can’t do things like this in the air fryer as it sealed too much so the sauce doesn’t thicken. The beef dopiaza came out well in the end but you need to cook it in a saucepan not the frying pan as it does tend to spit a lot.
