Emmasche
I bought two bread loafs at the world's best bakery today (first time in months).

Our “Emmasche” is a kind of “bread hymn” for the youngest in the Kissel house. Emma is the daughter of Peter and Paula. When she came to Grandma and Grandpa in Reichenbach, she often went to the bread drawer first, took out a “Knerzje” (end piece of bread) and nibbled on it with pleasure. This early love of bread prompted Grandpa to “give” one of his bread specialties the name of his (then) youngest granddaughter!
Ingredients: 60% rye flour, 40% wheat flour, sourdough, vitalized water, yeast, rock salt
