A classic, featuring a pylon!

After a bit of a break, I revived my starter and decided to bake some bread yesterday. I've been doing it so infrequently that I seem to have lost my touch. So for a change, I decided to try a recipe by La Petite Bette, a Canadian I came across in the French Facebook sourdough group I am in. She always does chatty videos of her recipes, so you get to enjoy a Canadian French accent.

This recipe was so bizarre ... no kneading, no stretch and fold, you just mix it and let it sit for 8 hours or more (mine looked so sticky and ragged that I cracked after an hour and did one round of stretch and fold, but other than that left it untouched till I shaped it). To bake, you put it in a preheated casserole in a very hot oven for six minutes, and then ... turn the oven off for 20 minutes. After that you take the lid off the casserole, switch the oven back on, and bake for another 20 minutes. What could possibly go wrong? Result in extras. I have just tried a slice; the crumb is rather dense, but still light, the crust is thin and crunchy, and it tastes good too. Happy with that!

While it was baking I used my surplus starter to make some pasta dough, and rolled it out this morning (extra 2). I had tagliatelle carbonara for lunch. It was really delicious, the best I've made -- home-made pasta makes all the difference! And then a walk for my blip -- much better weather than yesterday, thankfully.
