For the Weekend
Temperature zero. Mostly sunny. Strong wind from the Northwest.
I would have like to go out, but it was cold for the wind. Instead I first baked a gooseberry pie again for the weekend, it's usually our time for a treat. As I posted before we have a lot of own gooseberry left in the freezer, which would be good to get emptier before our moving time. This time a recipe for the pie was different. First, the filling contains cottage cheese. I had to test it. Also there should have been hazelnut in the dough, but I hadn't it. I replaced it with "talkkuna" in Finnish. Talkkuna powder is a mixture of roasted barley, rye, oat and pea flour. In Finland talkkuna is made by first steaming grains, then grinding them up and finally roasting them. I just spotted some recipe of gooseberry pie containing it and tried it here. It has nothing to do with hazelnut :)
I also reinforced with my assistant girl some cardboxes we have collected from a grocery delivery with strong adhesive tape to use them in the move.
Hope you all enjoy the weekend.
