Feeling a bit more lively, I decided to try this 'upside down' recipe - layers of vegetables and chick peas, topped with rice, in a casserole. The idea is that once cooked and rested, it can be turned out as a beautiful, colourful dome. There are variants of the recipe from Palestine, Iraq and other Arab countries.
We didn't quite achieve the perfect dome - I'd overdone the liquid a bit, so it emerged as if encircled by a shallow moat. Hence an image here of the plate (and some accompanying fried fish) rather than the whole thing. It tasted great though. Less liquid next time :-)
