Cactus Jelly
As promised, I finally got myself up to the Green Valley Pecan Store (we are home to the largest irrigated grove in the world) and bought myself a jar of Prickly Pear Cactus Jelly.
The jelly is made from the "tuna" I blipped a few days ago, the red figs that grow where flowers had earlier bloomed.
It's very sweet - one serving is 15 g and has 10 g of sugar - and tastes like a citrus-y grape to me. A little will go a long way. I guess that's why it's sold in such small jars.
