Bramble Plate cake

I came across the term 'plate cake' when I met J's mum in 1970, she always made it on a tin or enamel plate. Now her son ' S' is taking up the challenge and was proud to announce this evening that his bramble plate cake hadn't leaked, I think he sprinkled sugar on the base of the pastry. Those in the know will understand ..... perhaps.

It was very very good, we thought that a sprinkling of icing sugar would enhance the look of the top for the photo shoot - a little brown around the edge - but then decided no - this looks authentic.
