Empty room

We need to replaster as there are gaps through to outside and last winter was so cold . I really would like to get it done before the weather is arctic again.
Scarily John has the bit between his teeth and wants to transform all of the downstairs floor ; kitchen in the living room office in the kitchen snug in the office!
Help!
