The Scottish are coming!

I've got visitors coming next week from my Scottish life. I always get a little homesick for Aberdeen right before and right after a visit so I'm preparing for it now.
These are the pudding I've prepped for dinner when they are at the house. I'm doing a big Mexican feast and thought lemon and ginger snap wee ice cream sandwiches would be a light and refreshing way to finish the night. I've found they take about 4 days to set proper so I had to get them going. Soo yummy and a delightful way to follow a spicy meal.
