Marrow chutney

Today I decided to make marrow chutney as I have several large marrows in need of attention. This picture is the results. This is Irish Marrow Chutney and must be left for at least 5 months before eating as it will mature in the jars. I like to leave it for at least a year after which lovely honey tones will develop . So this time next year yum!!
