Experiments with spelt, part 3

Baked a spelt loaf yesterday, to see if my gluten intolerance can cope with the older wheat variety. The bread turned out well. It's a dense loaf, but not too heavy. Will probably toast well. I had two slices for lunch. Only time will tell whether or not that was wise.
