Chicken Piccata

For our Monday night supper. It is of Italian origin, and is chicken breasts browned, then cooked in a sauce of shallots, garlic, chicken broth, lemon juice, sherry, dried basil, salt and pepper and minced green olives with pimento. The chicken is removed to a platter and the sauce is thickened with sour cream mixed with flour. The sauce is poured over the chicken, then garnished with grated Italian Fontina cheese and lemon slices. With a Caesar salad, it was delicious.
