Cream Of Pumpkin And Apple Soup

I accidentally deleted my good picture...but here! I usually make this with Butternut Squash but Iv been wanting to try pumpkin! So here it is...and its pretty good, kinda tastes the same as the squash but are different lol here is how to make it :)

2 tbs butter, 1/3 cup onion chopped, 2/3 cup chopped celery, 3 cups peeled 1/2 in cubes squash or pumpkin, 2 pounds apples peeled cored thickly sliced (4-5 apples), 3 cups chicken broth, 1 cup water, 1/4 cup uncooked rice, 1 cup light cream, 1/4 tsp sugar, 1/4 tsp nutmeg....I also added a lil cinnamon on top.

melt butter in pan, saute celery and onion until soft. Add squash, apple, broth, water, rice. cover bring to boil. lower heat and simmer covered for 20 min or until rice and squash are done. Puree and add cream salt sugar and nutmeg. Heat gently and enjoy! :D :D
