Tuning in for apple day

I will be on an applely theme this coming week, gearing up for a couple of demo's next weekend to celebrate our very lovely heritage with this fruit.

Here is today's supper. Given the warm day we've been blessed with, a salad was totally appropriate. In with some veg. patch produce (spinach, beans, last of the peas), then a little grated ginger and garlic, some lemon juice and olive oil. Lastly, a Cox apple and few fresh walnuts.
