Apple & millet with hazelnuts

More apple recipe testing.

I hesitate to call this a salad because it contains cooked millet (cooled) and eats like a standard dish. I'm getting fonder of millet by the week as it's so versatile and fillling, yet doesn't lie heavy in the stomach. It's also gluten-free. Even if you're not avoiding gluten, it's handy to have variety so that you don't overdo one type of grain - being over-reliant on one ingredient is when people can run into problems.

Anyway, some millet, with grated carrot, diced apple, pumpkin seeds, and vine fruits. Dressed simply with lemon juice, olive oil and seasoned.
