Slow-Cooked
I asked Ceridwen for a recipe for fresh duck legs, which I bought because I went to the market near closing time and they were out of whole ducks.
Cooked at 250 F for two hours in a bath of orange juice, Worcestershire sauce, honey, mustard, garlic, and some dried laver (seaweed) flakes called Welshman's caviar.
the result was delicious!
