Arrow and I have been trying our hand at making mayo. Two reasons for this 1) we have a lot of eggs to use 2) we like mayo.

Our first attempt last week was, well... yuck! The recipe we used contained olive oil. And although we love olive oil it tasted disgusting in the mayo. This recipe was better and made good coleslaw but it's not so delicious you'd like to have it with chips.

You will notice the colour. I guess that's because our hen's eggs are so yellow. It did lighten a bit when we whisked it but it's certainly not the pale off white of bought mayo.

We shall continue to experiment with different recipes until we perfect it.
