65 Oechsle
Mwah... Yesterday's Leon Millot will not ripen any more, probably. I measured its sugar content at 65 Oechsle. 9% alcohol. A cold spring gave a too short growing season. The sun will not do much anymore to ripen. Some fermentation may take place within the grape, turning acids into sugars.
Now the vigneron is faced with hard choices. Does he leave them to rot on the vines? Will he add sugar or will he make a light fruity wine?
