Scrambled eggs with fresh basil...

Sometimes the simplest meals are the best especially when you can step just out the door to your herb garden and pick fresh basil to use. One of my favorite meals to make is scrambled eggs with fresh basil. I pick the basil from the garden, wash it and pluck the leaves from the stems. Melt butter in a pan and sautee the basil and then pour in the egg mixture. I prefer French scrambled eggs which are cooked very slowly, stirred gently and constantly through the cooking and come out very smooth and creamy, and the basil and bit of butter give in an incredible flavor. Good for breakfast or for dinner served with a glass of white wine. Elegant and simple.
