Scallops from NZ

My late Mom brought these scallop shells back from New Zealand about 30 years ago and I've always had them in my home. I had never eaten scallops, and recently when I was in NZ I tried them on two occasions at restaurants and was disappointed both times. Seems there is an art in cooking them! If/when I visit again, I will have to try them at a highly recommended restaurant.
