Enjera

Attended a fundraiser this evening for an Ethiopia development program. Enjera wat bunha. Served in abundance. A local restaurant owner was the chef. She's the one in the middle.

I have visited Ethiopia 8 or 12 times, and is one of my favourite countries to travel too. A big part of the reason for this is that Ethiopians themselves are so incredibly beautiful and warm in spirit.

The local Ethiopian association estimates that there are 50,000 Ethiopians living in Colorado.
