Another old trade, very few people have the now how to do.
First he breaks the stone with his special hammer, until a peace fits the space he needs to fill and lays it in place. Then one of his helpers beats the stones to compact the work with the tool you see on the right. In the end they brush in to the gaps a mixture of sand and cement to make it more stable.
